Having the same problem. I'd guess that it is because Google does not support MySQL 8.0.

Google states that the "Data Studio MySQL connector (not Cloud) https://support.google.com/datastudio/answer/7088031 "is based on Google Cloud SQL for MySQL, and is subject to the same limits on versions and supported features"
Under the Google Cloud SQL for MySQL, Google states that MySQL 8.0 is in fact supported since autumn 2020. Seehttps://cloud.google.com/sql/docs/mysql/features .
However, this is clearly not the case for the GDS MySQL connector.
It appears that no-one on the internet is able to connect to e.g. an AWS MySQL 8.0 instance. This is likely to be a showstopper for my client at least. Currently, infrastructure is hosted on both Google and AWS...
So as a minimum, i suggest that Google
1) Updates documentation to reflect reality
2) Provide forward-looking guidance as to this issue
3) Preferably, support MySql 8.0 connector in DataStudio
