As a workaround we added the following to our own manifest:

Description
2) Messages read in wrong language. This issue is fixed by changing system language to anything other than Italian.
3) "Hey Google, read my messages". The reason why this command is broken is beyond me. No input on the screen, no distraction, just the command and Google Assistant would ready my messages. The command is functional only with phone set to English (USA)
4) Routines. I can't say on how much of a large scale this is indeed an issue, but routines are fixed if phone is set to en-US and broken with phone in it-IT but there's people having them functional regardless.
5) "Do you want to reply?". When phone is set to Italian and speaks out messages it will end its speech with "You can hit the vpoce button and say reply". To my surprise, it was not the case since I've changed the system language, and GAssistant will just say "Do you want to reply?" and wait for my command instead of just quitting the conversation, and this is so much faster.
6) "Thanks". This is by far the most frustrating one. I don't know if this is the case for other langages too, but in Italian, whenever you wanna thank someone in a message, you... Just can't. Whenever I say the word "Thanks", Google Assistant would just completely ignore it. I've talked about this in the past in the product forum, and the issue was present in the normal Google App too, but wasn't fixed in Android Auto at all. If you want to compose a message that says "Thanks, mum" you will just end up with "Mum". With some older versions of Google App this was indeed fixed by changing system language to en-US, but I believe from version 11.32.11 this is broken again and I can't just thank people anymore, regardless of language.

Under Google > More > Settings > Voice the only language set is Italian
Switching languag for Android OS from it-IT en-US will make all the issues appear
