Issue summary: What you would like to accomplish:

It'd be useful to be able to select only specific log fields to be exported to Pubsub (for example the "textPayload" field) instead of exporting the whole JSON representing the log entry. This would be useful for integration with 3rd party tools where they may expect a string for example and not the whole JSON representation.

How this might work:

We may be able to select speciific fields during export sink creation, possibly with select boxes depending on the log filter used.

If applicable, reasons why alternative solutions are not sufficient:

An alternative solution is for example to export logs to an intermediate Pubsub topic and have a Pubsub-triggered Cloud Function processing those and sending the processed message to another Pubsub topic to be consumed. This involves additional work that may be cumbersome.
